That means you're only one hour away from sitting down to a plate of warm, soft cinnamon rolls dripping with a sweet, sugary glaze. Oh, and they require less than ten ingredients to make. Yes, that's it! And did I mention they're made with almond milk and are completely vegan? Here's my simple recipe for Homemade Vegan Cinnamon Rolls!
"That's the cinnamon rolls that I'm baking in the oven, sweet boy. And guess what?"
"Wha', momma?"
"There is no dairy in them, so you can have them too! I made them with your almond milk."
"Yay! I so es-cited!"
And there it is! As my four-year-old skips out of the kitchen laughing and exclaiming to his brother and sister, I can't help but smile at how happy he is knowing he'll be able to indulge in this batch of ooey, gooey cinnamon rolls. He is, after all, my main reason for baking with almond milk.
I've been working around my little guy's food allergies since he was first diagnosed with a severe dairy allergy--among other allergies--at only three weeks old. My first big breakthrough was right before his first birthday when I was attempting to make him a dairy-free cake and I discovered a little baking secret. With a good nut milk and vegan butter, he could still enjoy all my baked confections. Now, most of my cakes, bread, and other baked goods have these simple substitutions so the whole family can enjoy them together.
Dairy allergy or not, almond milk is a delicious, creamy alternative. I don't even have an allergy and nut milk is the only milk I'll drink now. It's that good!

Cinnamon rolls! You just can't beat a relaxed morning spent baking while the kids start their lessons and the aroma of cinnamon wafts through the air. I wouldn't trade it for anything.
Even if your mornings aren't relaxed, all you need is about one hour to put together these soft, warm cinnamon rolls. Proof the dough, roll it out, bake, and enjoy! That's it! These are so easy! Ready to mix up a batch for yourself and your family? Here's the recipe straight from my kitchen to yours!
Homemade Vegan Cinnamon Rolls
Ingredients:
Dough- 1 cup So Delicious Organic Almondmilk with Cashews
- 1/3 cup vegan butter
- 4 1/2 tsp. rapid rise yeast (2 packets)
- 1/4 cup and 1 tbsp. sugar (I used turbinado cane sugar.)
- 1 tsp. salt
- 2 1/2 cups all-purpose flour (divided)
- extra flour for dusting
Filling
- 2 tbsp. vegan butter (softened)
- 3/4 cup brown sugar
- 1 1/2 tbsp. cinnamon
- roughly chopped nuts (optional)
Icing Glaze
- 1 cup powdered sugar
- 1/4 tsp. pure vanilla extract
- 1-2 tbsp. So Delicious Organic Almondmilk with Cashews
DIRECTIONS:
- Put almond milk and vegan butter together into a large saucepan. Cook on the stove on medium heat until the mixture is warm and the butter melts. (Do not overheat! You just want this mixture to be slightly warm.)
- Remove from heat and stir in 1 tbsp. sugar. Sprinkle the yeast over the mixture. Stir and allow it to sit for 5-10 minutes until bubbles form. (The bubbles let you know that the yeast is active.)
- Stir in 1/4 cup sugar, salt, 2 cups all-purpose flour. Mix until the dough begins to come together. Gradually add the last 1/2 cup of flour. The mixture will be soft and slightly sticky.
- Lay parchment paper out on the counter and sprinkle with flour. Knead the dough on the floured surface a few times.
- Set the dough into a bowl greased with vegetable shortening or coconut oil. Place a kitchen towel over the bowl and allow the dough to rise in a warm place while you mix up the filling.
- Soften 2 tbsp. of vegan butter and set it aside. In a separate bowl, mix together brown sugar and cinnamon. You can even add chopped nuts if desired.
- Grease your baking pan(s). (I baked some of the rolls in a glass pan and others in my cast iron skillet. Rolls in both pans turned out amazing! You can fit all of your rolls into one large baking pan, though.)
- Sprinkle flour over the parchment paper surface again. Remove the dough from the bowl and form it into a rough rectangular clump in the center of the floured surface. Roll it out into a rectangle that is about 12 by 6 inches.
- Spread the softened vegan butter over the dough. Sprinkle the cinnamon sugar mixture over the butter and press it into the dough.
- Starting with one of the long sides, roll the dough into a log. With the seam side down, cut the log into 12 equal slices. Set each slice into the greased pan(s).
- Cover the pan(s) with a kitchen towel, set in a warm place, and allow the dough to rise for about 20 minutes or until the slices have doubled in size.
- While the rolls are rising, preheat the over to 350 degrees.
- You can also mix up your icing glaze. With an electric mixer, combine powdered sugar, vanilla, and 1 tbsp. almond milk. Gradually add the last tbsp. of almond milk until the glaze reaches the desired consistency. You may not need the entire amount of almond milk. Set the glaze aside.
- Once the rolls in the baking pan(s) have risen, bake them in the oven for 20-25 minutes or until the edges start to turn golden brown.
- Remove the rolls from the oven, cool slightly, add the glaze, serve, and enjoy!
