Coca-Cola Cupcakes

When I was a little girl, we lived in Atlanta--headquarters to Coca-Cola™. Field trips to the Coca-Cola Factory, Coca-Cola floats on the Fourth of July, and icy, cold Coca-Cola drinks at backyard barbecues and tailgate events were just commonplace. There was also my mom's scrumptious recipe for old-fashioned Coca-Cola Cake. What was it about that refreshing beverage that made her chocolate cake so moist and delicious! Yes, that's right! Coca-Cola was an ingredient right in the cake.

With a few modifications, I was able to turn the recipe for Chocolate Coca-Cola Cake into Coca-Cola cupcakes. Just like my mom's cake, they are so tasty and incredibly moist. You won't be able to eat just one!
During football season, we make it to a few games, but we usually tailgate at home with family and a simple spread of snacks, treats, and soft drinks. These Coca-Cola cupcakes are the perfect treat to enjoy for game day. With this ooey gooey treat, a classic chip like Wise Potato Chips, and a few soft drinks like Sprite and Coca-Cola, of course, you can pull together a simple tailgate event to enjoy the BIG game with family and friends at home. Keep reading for the recipe to these scrumptious Coca-Cola cupcakes!

I visited our local Family Dollar for the Coca-Cola products and Wise Chips for this preseason spread. The items I needed were in the beverage and snack section of the store. Wise Chips were what my mom ate when she was growing up, so she was excited to try them again. The nostalgic chip paired well with my twist on her traditional Coca-Cola recipe.
Coca-Cola Cupcakes
Prep time: 15 minutes (cake)
Bake time: 20-22 minutes
Yields: 24 cupcakes
Ingredients

  • 2 cups sugar
  • 2 cups all-purpose flour
  • 1 Cup Coca-Cola
  • 1/3 cup margarine
  • 1/2 cup solid shortening
  • 1 1/2 cup mini marshmallows
  • 3 heaping tablespoons Hershey's cocoa
  • 2 eggs
  • 1/2 cup buttermilk
  • 1 teaspoon baking soda
  • 1 teaspoon vanilla extract

Directions

Preheat oven to 350. Prepare a muffin pan with cupcake liners or use silicon cupcake liners. Sift sugar and flour into a mixing bowl. Set aside. In a small saucepan, blend the Coca-Cola, margarine, shortening, and cocoa and bring to a boil. Remove from heat and add to the flour mixture. Add eggs and beat with a mixer until blended. Add buttermilk, baking soda, vanilla, and marshmallows and mix well with mixer. Pour the batter into cupcake liners filling each one 3/4 of the way up. Bake for 20-22 minutes. Wait for the cupcakes to cool before frosting.

Coca-Cola Frosting

Ingredients

  • 1/3 cup margarine (softened)
  • 1/4 cup Coca-Cola
  • 3 tablespoons Hershey's cocoa
  • 1 1-pound box confectioner's sugar (powdered sugar)

Directions

In a large bowl, mix together the margarine, Coca-Cola, and cocoa. Add the sugar a little at a time and continue to mix thoroughly. If the frosting is too thin, add more sugar. Place the frosting into the refrigerator for 15-20 minutes. Spread or pipe the frosting onto cupcakes through a piping bag.
Cupcake Toppers
For a little extra fun, I made flags in our favorite team's colors for cupcakes toppers!

Supplies
  • toothpicks
  • cardstock
  • flag paper punch (or cut out by hand)
  • adhesive

Directions
1. Gather your materials.
2. Punch (or cut) out flags from the card stock.
3. Apply adhesive to the opposite sides of two flags. Sandwich a toothpick between the two pieces and press them together.
4. Place your flag toppers into your cupcakes.
