A Couple of Yummy Fall Recipes

Eggplant Parmesan
*Peel and slice one or two large eggplants.
*Sprinkle the eggplant slices with salt and let them sit for about an hour.
*Rinse and drain the eggplant.
*Layer sauce, cheese (Mozzarella and Parmesan), and eggplant into a pan--just like you would for lasagna.
*Bake on 350 degrees for 30 minutes.
*Serve and enjoy!

Pumpkin Muffins with Cream Cheese Filling
*In a large bowl, mix one box of spice cake mix, a 15 oz. can of pumpkin puree, and 2 tsp. of pumpkin spice.
*Spoon the batter into a prepared muffin pan.
*Sprinkle brown sugar on top of the batter in the pan.
*Bake on 350 degrees for 20-25 minutes.
*Let the muffins cool for about 30 minutes while the pumpkin aroma fills the kitchen.
*Use a cake decorating tip (Wilton tip #230 works best) and icing bag to fill each muffin with a cream cheese mixture (3oz. cream cheese, 1 tbs. sugar, 1 tbs. milk, and 1 tsp. vanilla).
*Enjoy!
