Don't you just love the time of year when coffee shops like Starbucks come out with their pumpkin drinks and desserts? I know I do! It really makes it feel like fall.
Here is a yummy recipe to try. It is my version of Starbucks' Pumpkin Cream Cheese Muffins.
Ingredients for the Pumpkin Muffins:
- 1 box of spice cake mix
- 1 15 oz. can of pumpkin puree
- 2 teaspoons of pumpkin spice
- small amount of brown sugar
Ingredients for the Cream Cheese Filling:
- 6 ounces of cream cheese (softened)
- 2 tablespoons of granulated sugar
- 2 tablespoons of milk
- 2 teaspoons of vanilla
Directions:
1. In a large bowl, blend together the box of cake mix, can of pumpkin puree, and pumpkin spice.
2. Spoon the batter into a prepared muffin pan. (I use muffin liners, but you can also spray the pan lightly with cooking spray.)
3. Sprinkle a little brown sugar on top of the muffin batter.
4. Bake on 350 degrees for 20-25 minutes.
5. Let the muffins cool for about 30 minutes while the pumpkin aroma fills the kitchen.
6. Use a cake decorating tip (Wilton tip #230 works great) and icing bag to fill each muffin with the cream cheese mixture. I'm usually very generous with the filling.
